sweet potato and cranberry quinoa

1 cup quinoa
2 sweet potatoes, diced
1/4 cup diced red onion
1/2 cup dried cranberries
fresh parsley, chopped
juice of half a lemon
olive oil
salt and pepper

Cook quinoa according to package directions.
Cook sweet potatoes in a skillet with a tablespoon oil until tender. Place it in a bowl. In the same skillet, saute the onion for 5 minutes. Place all the ingredients in the bowl  and gently mix, Season to taste.
