quick rice salad

1 1/2 cups cooked rice-any kind
1 stalk celery, diced
1 roasted red bell pepper,peeled and diced
parsley to taste
salt and pepper
1 T. oil
1 T. lemon juice

Combine all ingredients. Enjoy!
