black bean chocolate cake

1 15-oz can black beans, rinsed and drained                          
2 eggs
1 egg white
1/2 cup cocoa powder
3 T. natural applesauce
1/3 cup honey
1 tsp. instant coffee
1 1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. vinegar
1/4 tsp. salt
1 tsp. vanilla extract
chocolate chips

Using a blender or food processor, blend the beans until smooth. Add the remaining ingredients except chocolate chips, and process until smooth. Pour the batter into a greased 8-inch pan. Sprinkle chocolate chip on top if desired. Bake at 350 F. for 30-45 minutes or until a toothpick or knife inserted in the center comes out clean.
