lemon poppy seed muffins

1 cup almond flour                                          
1 cup oat flour
1/4 cup tapioca flour
1/4 cup potato starch
1/4 cup sugar
1 tsp. baking powder
1/2 tsp. salt
3 eggs
1/2 cup natural applesauce
1/4 cup maple syrup
1/2 -3/4 cup almond milk
1 T. vanilla extract
zest of a lemon
4 T. lemon juice
1 1/2 T. poppy seeds

Mix together the dry ingredients. In a separate bowl combine the wet ingredients. Add the wet mixture to the dry and mix until just combined. Stir in the poppy seeds
. Scoop into greased cupcake liners and bake at 350 F for 30 minutes.
