chunky vegetable soup

 1 medium onion, diced
2 garlic cloves, chopped
2 sweet potatoes, diced or cubed
3 carrots, sliced
1 potato, cubed
2 yellow squash or zucchini, diced
1 tsp. salt
ground pepper to taste
1/4 tsp. dried thyme
5 cups water
1 can lentils,drained
1/2-3/4 cup frozen peas



Heat a 6-8 quart pot over medium heat. Add a teaspoon oil and saute the onion and garlic until fragrant, about 3 minutes. Add remaining ingredients except lentils and peas.Cook 45 minutes.Add the lentils and peas. Cook another 10 minutes.
