Turkey veggie meatloaf

1 onion, diced
2 cloves garlic, chopped
2 celery stalks, diced
1 red bell pepper, diced
salt & pepper
1/4 tsp. dried thyme
1 lb. ground turkey
1 egg
3 T. gluten free breadcrumbs or corn flake crumbs
1 tsp. mustard
1/4 cup barbecue sauce

Heat a pan over medium heat. Add oil, onion, celery, garlic, red pepper, salt, pepper and thyme. Saute for 10 minutes. Let cool. In a medium bowl, combine all the ingredients except barbecue sauce. Mix well. Put mixture in a 9-inch pan, loaf pan, or muffin cups. Bake for 30-40 minutes at 400 degrees F.
